Roast-to-order is both a philosophy and an operational model. It means we don't roast your beans until after you order them. We believe freshness is a (maybe the) critical characteristic determining one's enjoyment of coffee beans. So we prioritize freshness over efficiency, over cost, and over profit.

Roast date is an essential piece of information for serious coffee drinkers. Roasted coffee is like bread: It has a shelf life after which it goes stale. If I'm paying $15-20 for a pound of coffee I want to know it's fresh and our customers expect the same.

Heh, no. But we know what you're talking about. We see value in basic tasting notes, for example, but at the end of the day what we care most about is not words but your experience and your enjoyment. Are you in a state of coffee bliss when you smell the beans? When you take that first sip? When later in the day you think, "Sweet, I get to do that again in less than 24 hours." That's what we're about and how we measure success.

Aside from a few important points, like knowing the roast date of any beans you buy, we'll leave the nerding to others with their twirled moustaches.
